These came out of sourdough-starter experimentation.
These came out of sourdough-starter experimentation. The tested sweet spot was about 50 g of chilled beef-and-cheese filling per bomb—enough for a big bite without fighting the seal.
Method
Mix flour, starter, milk, egg, sugar, and salt. Rest 20 minutes; knead in butter until smooth. Rise 3–5 hours until 60–75% larger.
Cook onion and beef in fine crumbles. Add broth, Worcestershire, mustard, and seasonings; reduce until moist but not wet. Cool.
Mix cream cheese, Cheez Whiz, American cheese, mustard, pickle brine, and minced pickles; fold into beef and chill 30–45 minutes.
Divide dough into 12 pieces, round, cover, and rest 10 minutes.
Flatten each to 5 inches. Add 45–50 g filling, half a cheese slice, and 1–2 pickle chips. Seal tightly and place seam-down.
Proof 45–90 minutes. Brush with butter, add sesame, and bake at 375°F for 20–25 minutes. Finish with garlic butter.
Kitchen note: Chill the filling before stuffing and do not exceed roughly 50 g per bomb.
