THE STORY
The pantry jar becomes the whole platter.
This recipe gives the pressure-canned chickpeas a clear destination. Their softer, buttery texture blends into hummus especially well, while roasted red peppers bring sweetness and color without making the dip heavy.
Instead of stopping at a swirl of olive oil, the hummus becomes the base for cucumber, tomatoes, red onion, Kalamata olives, parsley, paprika, and tzatziki. It eats like a dip but carries enough texture to anchor a snack board or light meal.
Method
Blend.Process chickpeas, peppers, tahini, garlic, lemon, olive oil, salt, and cumin until mostly smooth. Add cold water until creamy.
Plate.Spread onto a platter or shallow dish and swirl the top with a spoon.
Load it.Scatter cucumber, tomatoes, onion, and olives over the hummus. Drizzle with tzatziki and finish with parsley, paprika, and olive oil.
Serve.Chill briefly if desired and serve with pita, naan, crackers, flatbread, or vegetables.
For a looser dip, add a little more cold water or olive oil. The platter is best the day it is assembled.
