THE STORY
The kind of pantry jar that already knows what dinner is.
This formula starts with 2,040 grams of potatoes and builds a hearty ratio around them: plenty of mild Italian sausage, enough kale to keep its identity, and onion and broth to tie the jar together.
Once opened, it needs very little—perhaps Parmesan, lemon, red pepper flakes, or simply warm bread. The work happens in the batch; the payoff is the night when dinner can be heated in minutes.
Recorded method
Brown the sausage.Cook over medium heat until browned and no longer pink, breaking it up as it cooks.
Add vegetables.Add onion, potatoes, kale, salt, and pepper. Cook about 5 minutes, until the onion softens.
Add broth.Cover the ingredients with broth while leaving expansion room; bring to a simmer for 5 minutes.
Hot pack.Ladle into hot jars, leaving 1-inch headspace. Remove bubbles, adjust with hot broth, wipe rims, and apply lids fingertip-tight.
