Chunky sweet-hot garden relish with Firefly tomatoes and a kick of Stripey heat.

THE STORY

A real garden batch pairing Firefly cherry tomatoes with red Sugar Rush Stripey peppers. Sweet up front and mildly hot on the finish, it was deliberately left chunky for sandwiches, hot dogs, burgers, and brats.

Method

  1. Halve or quarter tomatoes; dice cucumbers, onions, and sweet peppers to ¼ inch. Finely dice Stripey peppers and mince garlic and ginger.
  2. Toss vegetables with 75 g salt. Cover 1–2 hours, drain 20–30 minutes, and reserve liquid.
  3. Simmer vinegar, honey, sugar, reserved liquid, seeds, and pepper for 5 minutes.
  4. Add drained vegetables and simmer 10–15 minutes, keeping the relish chunky.
  5. Cool a sample; add remaining 15 g salt to taste. The recorded batch measured pH 3.44 in a cooled chunky sample.
  6. The card records hot-packing with ½-inch headspace and boiling-water processing for 25 minutes. Treat this as a personal batch record, not a validated process.
Kitchen note: For shelf-stable storage, use a tested relish formula or qualified process authority; otherwise refrigerate.
