The contrast does the work here: warm garlic-and-sesame chicken against chilled lettuce, carrots, radish, green onion, and a lime-bright peanut sauce.
Keep every component separate for meal prep. The lettuce stays crisp, the chicken reheats cleanly, and everyone can build their own wrap at the table.
Method
Make the sauce.Whisk all sauce ingredients, adding warm water a tablespoon at a time until smooth and drizzly.
Cook the chicken.Heat oil over medium-high. Cook garlic 30 seconds, then add chicken, soy sauce, sesame oil, ginger, pepper, and salt. Break up and cook 6–8 minutes.
Prep the vegetables.Shred carrots, dice radish, slice green onions, and wash and dry the lettuce.
Assemble.Fill each lettuce leaf with chicken and vegetables. Drizzle with peanut sauce and add peanuts and cilantro if using.
Serve.Serve immediately with lime wedges.
Turkey, shrimp, tofu, or tempeh all work. Use sturdy leaves and avoid overfilling; double the sauce if you like extra for dipping.
