Blackstone-Finished Smoked Birria Tacos

Holy Voodoo–seasoned chuck roast, chile consommé, a low braise, and the crisp edge only a hot griddle gives.

THE STORY

Smoke it, braise it, then chase the crisp.

Birria already rewards patience, but this version gives the chuck roast a separate smoke stage before it ever enters the consommé. Holy Voodoo builds the bark while ancho, guajillo, árbol, chipotle, tomato, garlic, and onion wait below.

Once the beef reaches the braise and turns fork-tender, the Blackstone changes the texture completely. Consommé-dipped tortillas, melting cheese, shredded beef, and a hard griddle finish make the final crisp as important as the long cook.

Method

  1. Build the consommé.Combine 3 cups stock, chiles, chipotle, garlic, onion, cilantro, tomatoes, peppercorns, cumin, cinnamon, bay, and salt in a Dutch oven. Bring to a simmer.
  2. Smoke.Season the roast and place it on a rack over the simmering consommé. Smoke at 275°F for 4–5 hours, to 165–175°F internal.
  3. Braise.Put the roast into the consommé, adding the remaining stock as needed. Cover and simmer low 2–3 hours, until fork-tender and 205–210°F.
  4. Shred.Discard large fat, skim excess fat from the broth while leaving some for flavor, and return shredded beef to the consommé.
  5. Crisp.Dip tortillas in consommé, let excess drip, and cook on a medium-high griddle 1–2 minutes per side. Add cheese and birria, fold, and cook until crisp.
  6. Serve.Top with onion and cilantro. Serve with lime and warm consommé for dipping.
The consommé improves overnight. Freeze leftovers for future tacos, ramen, or rice; use leftover birria in burritos, nachos, or loaded fries.
